Roasted Glutinous Rice Flour

Ingredients: 100% of roasted glutinous rice flour.

Used to make cakes such as sticky rice mooncakes, snow-flaked cakes.

HOW TO MAKE STICKY RICE MOONCAKES:

Add 800 ml sugar water and 12 ml pomelo essence in a bowl and mix them well, then stir quickly and constantly while gradually adding into 350 g of groasted glutinous rice flour.

Put the mixture on the tray (sprinkle the tray with flour beforehand 50 g) and knead until the dough is smooth and supple with a good elastic stretch

HOW TO MAKE SNOW-FLAKED CAKES:

Add 240 ml sugar water and 5 ml pomelo essence in a bowl and mix them well, and gradually adding into 380 g of groasted glutinous rice flour, and then stir until the dough is all moistened and sticky.
